Fake lemon cheesecake#

Ingredients#
- 250g digestive biscuits
- 150g butter
- 5-6 lemons for juice and rind
- 400g (sweet) condensed milk, the thicc nestle one
- 3.5dl full fat cream
Instructions#
- In plastic bag crush biscuits with rolling pin
- Melt butter gently in pan
- Add crushed biscuits with butter and mix well.
- Cover base of 26cm pie dish or loose bottomed tin with buiscits and press firmly down with spoon.
- Chill base in fridge
- Grate rind of 2 lemons, in bowl.
- Squezze 1.25dl of lemon juice sieve it and add it to bowl
- Add condensed milk to bowl and stir well
- Whip cream till stiff and fold into the lemon mix
- Pour lemon mix on top of base, chill for at least 3 hours
