Fake lemon cheesecake#

Ingredients#

  • 250g digestive biscuits
  • 150g butter
  • 5-6 lemons for juice and rind
  • 400g (sweet) condensed milk, the thicc nestle one
  • 3.5dl full fat cream

Instructions#

  1. In plastic bag crush biscuits with rolling pin
  2. Melt butter gently in pan
  3. Add crushed biscuits with butter and mix well.
  4. Cover base of 26cm pie dish or loose bottomed tin with buiscits and press firmly down with spoon.
  5. Chill base in fridge
  6. Grate rind of 2 lemons, in bowl.
  7. Squezze 1.25dl of lemon juice sieve it and add it to bowl
  8. Add condensed milk to bowl and stir well
  9. Whip cream till stiff and fold into the lemon mix
  10. Pour lemon mix on top of base, chill for at least 3 hours
